Simple Egg Salad Recipes?

I have been craving an egg salad sandwich, but I want one with normal everyday ingredients. I really just need to know how much to put in it. I want mayo/miracle whip, eggs, sweet pickle relish, and mustard. Any ideas?

    Eggs, mayo (NOT salad dressing), OLIVES, cajun seasoning.

    2 eggs.

    A handful of olives.

    A tad cajun seasoning.

    Mayo to taste.

    boil 2-3 eggs and chop them up…add other things in small amounts until you get what you want

    Well, I’m a kosher dill pickle girl myself, but:
    2 eggs, @ 1 TBSP mayo, @ 2 tsp relish mustard, salt pepper
    should do you. Oh, I like onions in mine, as well. And always start with about 1/2 the mayo you think you should use, then add some more if you think it is too dry once you’ve finished mixing everything in — that way it won’t be runny.

    Use one egg yolk and the (hardened) whites of another egg or two. . .to cut down on cholesterol. (As one egg yolk = 70% of suggested daily allowance.)

    Also. . .an easy trick. . .use eggless mayo. . .it’s becoming increasingly popular. . .and if you run into any problems finding it, see your local Trader Joe’s store (originally from So. Cal. but now in a number of states throughout the country).

    Chopped up boiled eggs, miracle whip, ****** of mustard, fresh ground black pepper…..mix well and enjoy on white bread. Yummy!!

    My normal recipe for egg salad:

    - 1 1/2 tbsp onions chopped finely
    - 4 hard boiled eggs (mash)
    - Miracle whip or Japanese style mayo (e.g. Kewpie)
    - 1 tsp mustard (optional)
    - 1 tsp of dried parsley (optional)
    - Pinch of salt and pepper to taste

    Combine all the ingredients and mix. Usually I would combine both miracle whip and the Japanese style mayo (really rich flavour). The onions is to give it a tad of sweetness, so that the sourness of the mayo and mustard doesn’t overpower it.

    I like mine with celery … Some hard boiled eggs chopped, chopped celery, salt and pepper, Miracle Whip and mustard - mix it all together, put it on fresh white bread with a slice of lettuce and yummy!

    What about Egg-Potato Salad? This is my original recipe. My nieces and nephews crave for this salad every week. And to think that I don’t know how to cook. I was just experimenting.

    6 Hardboiled Eggs (diced into six or eight cubes)
    6 Medium-sized Potato (peeled, boiled and diced into cubes the same size with the eggs)
    Mayo (220ml or 7.48 fl oz)
    Sweet Pickle Relish (1 cup)
    Onion (1 big one sliced into very small pieces, as in teeny weeny)
    Ground Black Pepper (1/2 teaspoon)

    While the eggs and potatoes are boiling, mix the relish and sliced onion. Add the potatoes (cooled first), then the mayo and pepper. Mix Mix. The sliced eggs come in last. Mix Mix. Then taste.

    Egg Salad

    Ingredients

    (1 servings)

    6 Egg; hard cooked, chopped
    1/4 c Mayonnaise; to 1/2 cup

    SEASONINGS TO TASTE:
    Salt
    Seasoning salt
    Garlic salt
    Celery salt
    Dill weed
    Paprika

    Instructions

    Mix together eggs, mayonnaise, seasonings and optional ingredients of your choice:

    1/2 c cheddar cheese, cubed and 2 Tb sour cream 1/4 c toasted almonds, sliced or chopped 1/2 c green or ripe olives, sliced 1/4 c parsley, minced; 1/4 c cucumber, minced; 3 Tb French dressing 1 c olives, sliced; 1/2 c celery, chopped; 2 Tb green onion, chopped; 1 Tb pimiento, chopped 1/4 c celery, chopped; 1/4 c pickle relish; 2 Tb green onion, finely chopped
