My mom made pickled eggs and beets for Easter, but not sure if it’s good?

Feed some to the dog. If he doesn’t die or throw up it’s ok to eat.

she might have either let them sit on the counter over night and that’s why that happened or she left them in the refrigerator to long

Well, if she’s made the same recipe many times, and they are very different, I would be wary.
I’ve pickled eggs before and I can’t see why the juice would ever get thick.
There’s a possibility one of the eggs was cracked or not good. (In which case, they’re not good.)
But if the beets are also thickening up, maybe it’s in the recipe for the pickling juice. Does it have a lot of sugar in it? It shouldn’t.
I would never, ever serve anything that I was doubtful about. You don’t want to send a bunch of people to the ER over some pickled eggs.
