How long is pickle juice good for?
David asked:
I had a jar of pickles, now only two left in jar, and I’m wondering if I could still use the pickle juice to pickle some boiled eggs? The jar of juice has been sitting in room temperature for the last month and a half maybe. Is it safe to pickle some eggs? Thanks for you advice and replies.

Pickles were invented before refrigeration. they used to sit in barrels in general stores for months. I wouldn’t worry about the juice. It’s a preservative, after all. If you’re nervous, boil it then let it cool before using again.

Throw it out and get some new stuff.
Although it’s highly acidic for the price it’s hardly worth the risk.

In the old days, pickle juice was something totally different than what you find in the jars today. I know that because I still make pickles from scratch. The juice from homemade pickles has lots and lots of flavor - either from salt or from sugar or both. The juice you find on store-bought pickles today has hardly any flavor in it at all. I doubt they use the same quantity of salt and sugar that they used to - because they figure a person will keep it in the fridge once it’s open.
I know when we visited Canada, they have a much larger bulk foods section there and they have their pickles out in the open and not in cans or jars and don’t seem concerned about problems with the juice - but I haven’t tasted their juice to know if they make it the old-fashioned way or how you get it in the U.S.
Since it was at room temperature, I wouldn’t risk it - the flavor isn’t that great if you got it from a grocery store anyway.
Hope that helps.

Rli R is right on…It is not worth the chance unless you boil it up with more vinegarand about a tsp of salt. But you can make up a new batch of juice for pickling….
I googled it and gots lots of choices…Pickling eggs is what I typed. One said to just boil up vinegar and water and put the eggs in the jar pour on the boiling liquid and cap them. Others used beets for the red color and additional flavor. FUN lots of choices in the source list below….
